How to make:
- Chop brinjals and deep fry them in oil
- In a pan, saute garlic and tomatoes
- Grind the brinjals and tomatoes together
- Take the puree into a heated pan
- Add the desired seasoning (salt, pepper, chilli powder, garam masala etc)
- Add paneer cubes and cook it for couple of minutes
Verdict:
This is actually a sauce for pasta, I have seen it done with egg plant. I had eaten with roti as well as rice, since the sourness was pumped up by tomatoes, it tasted better with rice. May be using two tomatoes would make it a better flavor.
