Spinach Chickpea Salad


Ingredients:


Grated spinach - 1 cup
Pasta Fusilli -1 cup
Cream - 1/2 cup
Chickpea boiled - 1 cup
Maida - 1 tsp
Salt - to taste
Olive Oil - as required

How to make:

  1. Saute spinach with little in olive oil
  2. Boil pasta in water with added salt
  3. Drain the water after pasta is al dente
  4. Add oil to a pan and add tsp of maida
  5. Fry a bit and add the cream
  6. Add salt and pepper to the same
  7. This will turn to a rough texture paste
  8. To a bowl, add the spinach, pasta and the chickpeas
  9. Add the cream paste and mix well
  10. Add salt and pepper to taste
Verdict:

A dish out of blue for lunch. Tasted amazing and I have used the green pea fusilli, making the dish very low on carbs.
