Shahi Tukda

Ingredients:

White bread - 4 slices
Full fat milk - 1/2 ltr
Fried and chopped nuts - 1/2 cup
Sugar - 1 1/2 cup
Water - 1/2 cup
Ghee
Cardamom - 4
Saffron - pinch

How to make:

  1. Bring the milk to boil in a pan
  2. Keep heating the milk, cleaning off the dry edges and adding back the cream
  3. Add cardamom powder and saffron
  4. As the milk comes together, add 3 tbsp of sugar and the chopped nuts
  5. Remove the pan from the stove when the sugar completely dissolves
  6. Chop the bread slice into triangles and fry them in ghee
  7. Make sugar syrup with rest of the sugar and water
  8. Take the bread slices into a plate and pour the sugar syrup with a spoon over the slices
  9. Coat each slice with spoonful of rabdi
Verdict:

The best sweet ever. A traditional recipe and everyone loved it. Definitely, try it.

Baingan Paneer

Ingredients:

Brinjals - 8-10
Tomatoes - 3
Garlic cloves - 6
Paneer cubes (medium) - 16-20
Salt and Pepper - To taste
Oil

How to make:

  1. Chop brinjals and deep fry them in oil
  2. In a pan, saute garlic and tomatoes
  3. Grind the brinjals and tomatoes together
  4. Take the puree into a heated pan
  5. Add the desired seasoning (salt, pepper, chilli powder, garam masala etc)
  6. Add paneer cubes and cook it for couple of minutes

Verdict:

This is actually a sauce for pasta, I have seen it done with egg plant. I had eaten with roti as well as rice, since the sourness was pumped up by tomatoes, it tasted better with rice. May be using two tomatoes would make it a better flavor.

Aloo-Pepper Roll

Ingredients:

Tortillas - 2
Mashed Aloo curry - 2 tbsp
Green chutney - 2 tsp
Mayonnaise - 1 tbsp
Chopped Bell peppers (3 types) - 1 cup
Tomato sauce - 4 tsp
Salt and Pepper - To taste
Oil

How to make:

  1. Saute the bell peppers with salt and pepper in oil
  2. Warm the tortillas
  3. Place tortilla on a flat plate
  4. Apply the tomato sauce on the tortilla
  5. Place the aloo curry in the center line
  6. Add peppers on to the curry
  7. Add green chutney and then mayonnaise
  8. Close the tortilla from left and right

Verdict:

There was aloo curry leftover from lunch and this was a quick snack for evening. It was really yum. You can add coriander and sweet corn too for enhancing the taste. Feel free to add your choice of seasoning to the peppers.
