Ingredients:
Brown Rice - 1 cup
Broccoli - 1
Onion - 1
Garlic cloves - 6
Olive oil
Salt and pepper- to taste
How to make:
- Chop off the stems of broccoli
- Boil the stems till tender
- Add florets to another pan of boiling water
- Let the florets cook for 5 mins and remove them
- Save the water of boiled stems
- Grind well the boiled stems
- Add olive oil to a pan
- Add chopped onion and garlic
- Add the stem paste
- Pour in the stock from boiled stems
- Add salt and allow it to boil for few minutes
- Add the rice
- After rice is cooked, add the florets
Verdict:
Followed an online recipe. Used brown rice instead of arborio rice, typically used for risottos by Italians. I felt I should have used butter or ghee instead of olive oil.
