Ingredients:
Tortillas - 2
Paneer sliced - 1/2 cup
Grated capsicum - 1 cup
Fajita Seasoning mix - 1 cup
Tomatoes - 2
Onion - 1
Green Chillies - 2
Coriander - handful
Lemon - 1
Lettuce green leaves - 4
Cooked rice - 1 cup
Oil - 1 tsp
Salt - to taste
Paneer sliced - 1/2 cup

How to make:
- Saute the capsicum in oil
- Add salt to it
- Add paneer to the capsicum and saute for two minutes
- Add the seasoning mix to this and saute for two minutes
- Add the rice and saute for a while
- Chop coriander and add it to the rice mixture
- Finely grate onion, tomatoes and chillies
- Mix them and add salt and lemon juice
- Warm the tortilla wrap and place it in a plate
- First place the rice mixture in the middle
- On that, arrange the salsa (tomatoes mixture)
- Over these, add chopped lettuce leaves
- Fold the wrap
Verdict:
Wow, what a dish! I need to work on it again with beans instead of paneer and all kinds of peppers. Also adding mayonnaise or sour cream will beautifully transform this Mexican dish. Try garam masala if can't find fajita seasoning.
